Cupcakes for breakfast!? This version, yes. They are healthy and full of protein to give you a great start to your day. I love that this recipe is also freezer friendly and a quick breakfast to grab for mornings on the go.

Breakfast Cupcakes Recipe

The ham is the cupcake “liner” and then you can fill it up with egg and other goodies.

Here’s how to whip up these cute, clever “cupcakes!”

Ingredients You’ll Need:

  • 12 slices of ham
  • 10-12 eggs
  • 1 cup milk
  • 1 – 2 cups of shredded frozen hash browns
  • 1 – 2 cups of shredded cheddar cheese

Preheat the oven to 350. Lightly spray or butter your cupcake pan, then fill each spot with a slice of ham as the cupcake “liner.”

Then fill each spot with filling of choice.. I used hash browns and cheese. You could also fill it up with veggies.

Mix the eggs and milk in a separate bowl. Pour the egg mixture into each “cupcake.”

Bake for 10 – 20 minutes, until the egg is cooked. I know that’s a rather long time range, but it honestly depends on how your oven works, how big the eggs were, and how much of the mixture you poured into each cupcake. So… my best advice is to just keep an eye on them.

Now, let’s be honest, if one of these and a regular cake cupcake covered in frosting was placed in front of me… well with the sweet tooth I have I’d probably grab the sweet version.

But these cupcake are delicious and work out great for a quick breakfast. That way you can save the sweet cupcakes for dessert 😉
