When I don’t have a meal plan for the week, it usually ends up costing us more money than when I do. “Hmm.. I don’t know what we should have for dinner. Why don’t we just grab a pizza for tonight?” Sound familiar?
Yeah.. That’s where eMeals works out so wonderfully. They do all the meal planning for you! I signed up for the clean eating for 2 plan. The first recipe I tried was Skillet Chicken with Salsa and an Avocado-Orange salad. It was delicious and simple to make. I love the freshness of the clean eating recipes!
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 tsp fajita seasoning
- 1/4 tsp salt, 1/4 tsp freshly ground pepper
- 1 Tbsp olive oil
- 1 cup fresh salso
- 2 Tbsp chopped fresh cilantro
- 1/2 cup uncooked brown rice
For the Avocado-Orange salad:
- 1 ripe avocado, pitted and sliced
- 1 naval orange, peeled and sectioned
- 2 tsp fresh lime juice
- 2 tsp honey
- 1 Tbsp olive oil
- 1/8 tsp salt, 1/8 tsp freshly ground pepper
Directions:
Sprinkle chicken with fajita seasoning, salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Reduce heat. Add chicken to skillet, and cook 2 minutes per side or until browned. Add salsa and cilantro, and cook 3 to 5 minutes or until chicken is done and salsa mixture is bubbly. Meanwhile, cook rice according to package directions. Serve chicken mixture over rice.
Combine avocado and orange in a serving bowl. Whisk together lime juice, honey, oil, salt and pepper until blended. Pour dressing over avocado mixture; toss gently to coat.
