This weekend I made 40 meals for less than $30! I made both regular burritos and breakfast burritos. Total supplies for both recipes came to $29.61 (not counting the paper towels and aluminum foil I used to wrap them.) This means each burrito was 74 cents to make! If I had know the burrito size tortillas were cheaper at Aldi than Wal-Mart, they only would have cost 68 cents each! Now these numbers are combined supplies for both kinds of burritos. I ended up getting a few less breakfast ones made than the recipe said; however, I had some extra filling from the regular burritos to fill up the extra tortillas. In the end, it all evened out! Both kinds turned out really tasty!

Here are a few changes I made just to better suit my husband and my tastes.
My changes to the breakfast burrito recipe:
I omitted the onion and green pepper.
I added a potato that I finely chopped and cooked in the skillet before adding the egg mixture. I think hash browns would work well too.
I used 12 eggs instead of 18 and added some egg substitute to make up the difference.
My changes to the regular burrito recipe:
Instead of refried beans, I used a can of rinsed black beans.
I added a package of frozen fire roasted corn.
Instead of enchilada sauce I used mild salsa.
I also didn’t end up using quite as much cheese as the recipes call for. I ended up needing only 1 bag of shredded cheddar cheese for both recipes.
Now that our kitchen freezer is pretty stuffed, my husband decided it was time to finally move the extra freezer that has been sitting in the garage (unplugged) into the house! Yesss!
Finally, little bit more burrito math:
Breakfast burritos turned out to be about 64 cents each.
Regular burritos are actually about 88 cents each. Really just because beef is more expensive than ham!
This freezer cooking project turned out great, and we should have enough burritos to last us awhile!
