These layered muffins are great for breakfast, dessert, or a snack!
Ingredients:
- 1 Tbs ground flax seed
- 3 Tbs water
- 1/3 cup brown sugar
- 3 Tbs flour
- 2 tsp ground cinnamon
- 3 Tbs cold butter
- 1 3/4 cup flour
- 1/3 cup sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1 cup apple juice and/or applesauce
Directions:
Combine the ground flax seed and water and set aside.
Add brown sugar, 3 Tablespoons flour, cinnamon, and butter in a blender or food processor and pulse until combined.
In a large bowl, whisk flour, sugar, baking powder, and salt. In the middle of the dry ingredients, pour in the flax seed and water mixture and apple juice/sauce. Fold together until combined. Be careful not to over-mix.
Grease 12 muffin tins. Spoon about 1 tablespoon of the batter into the muffin cups. Top with 1 Tablespoon of the streusel mix. Add another layer of the batter and streusel mix.
Bake at 400 for 20 minutes or until a toothpick inserted comes out clean.
