This is a recipe I found and tweaked while I was looking for a lighter cookie recipe.
Ingredients:
- 2 tbs butter, melted
- ½ cup sugar
- ¼ cup unsweetened cocoa
- 1 large egg
- 1 tsp. Vanilla
- ¼ cup uncooked regular oats
- ¼ cup + 2 tbs flour
- ¼ tsp baking powder
- dash of salt
- ¼ cup mini chocolate chips
Directions:
- Preheat oven to 350
- In a large bowl, stir together the butter, sugar, cocoa, egg, and vanilla
- Add in the dry ingredients (except chocolate chips) and stir until well blended
- Fold in the chocolate chips
- Drop by rounded tablespoonfuls onto a baking sheet (sprayed with cooking spray so they don’t stick). The cookies hold their shape pretty well, so you can press them down if you want flatter cookies.
- Bake for about 9 minutes, the centers should be almost done. Remove from oven and let cool on the pan.
- Enjoy!
I found these to be really tasty, and the oats make them more filling than other recipes!

I don’t think I’ve every had chocolate oatmeal cookies but they certainly look delicious.
