chocolate oatmeal title

This is a recipe I found and tweaked while I was looking for a lighter cookie recipe.

Ingredients:

  • 2 tbs butter, melted
  • ½ cup sugar
  • ¼ cup unsweetened cocoa
  • 1 large egg
  • 1 tsp. Vanilla
  • ¼ cup uncooked regular oats
  • ¼ cup + 2 tbs flour
  • ¼ tsp baking powder
  • dash of salt
  • ¼ cup mini chocolate chips

Directions:

  1. Preheat oven to 350
  2. In a large bowl, stir together the butter, sugar, cocoa, egg, and vanilla
  3. Add in the dry ingredients (except chocolate chips) and stir until well blended
  4. Fold in the chocolate chips
  5. Drop by rounded tablespoonfuls onto a baking sheet (sprayed with cooking spray so they don’t stick). The cookies hold their shape pretty well, so you can press them down if you want flatter cookies.
  6. Bake for about 9 minutes, the centers should be almost done. Remove from oven and let cool on the pan.
  7. Enjoy!

I found these to be really tasty, and the oats make them more filling than other recipes!
