What to do when you’re craving cheesecake but it’s the middle of summer and you don’t want to turn your oven on? Make a no-bake version, of course 🙂 This recipe was inspired by an apple dip recipe, but I thought it’d make a nice, rich cheesecake.
Ingredients:
1 – 8oz. package of cream cheese
1/2 cup peanut butter
1/2 – 3/4 cup powdered sugar
1 tsp vanilla
3 tbsp milk
1/2 cup mini chocolate chips
24 vanilla wafers
Directions:
Line 24 mini muffin tins with paper liners and put a vanilla wafer in the bottom of each to make a crust.
Combine cream cheese, peanut butter, sugar, and vanilla in bowl and mix well.
Add in milk and mix. Then stir in the mini chocolate chips.
Scoop cheesecake mixture on top of vanilla wafers. Refrigerate for at least an hour and serve!

Oh yum! I love all things peanut butter and especially all things chocolate. I might try these with an oreo crust…because one can never have too much chocolate!
