This is a recipe I threw together one afternoon when I wanted to use up some apple I bought the week before. I thought an apple pie filling would taste good in between some bubbly biscuits… so this is what I came up with!
Ingredients:
- 4 small apples
- 3 Tbsp sugar
- 1/2 Tbsp cinnamon
- 4 Tbsp brown sugar
- 1 cup baking mix
- 1/4 cup sugar
- 1/3 cup milk
Start by chopping the apples into small chuncks. But them in a buttered baking dish and stick them in the oven at 425 for 20 minutes or so.
For the biscuits, mix the baking mix, 1/4 cup sugar, and milk in a medium-sized bowl.
Mix until a soft dough forms.
Drop half of the mixture by rounded spoonfuls into a buttered dish.
When the apples are softened, put them in a mixing bowl and add cinnamon, 3Tbsp sugar, and brown sugar.
Mix well and pour over biscuit dough.
Add the rest of the dough in spoonfuls over the top of the apples.
Bake for 10-15 minutes or until biscuits turn golden brown.
When it was done baking, I mixed some powdered sugar and milk to create a glaze to drizzle over the top.
Cut into slices and enjoy! I think this recipe is good for a nice breakfast/brunch casserole, or it would work for dessert too 🙂
